DIY Friday

Delicious Vegetarian Black Bean Soup

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 1 teaspoon cumin
  • 3 teaspoons chili powder
  • 3 15 ounce cans black beans
  • black pepper, to taste
  • 1 cup of salsa
  • 1/2 cup of shredded cheese
  • fresh chopped basil
  • 1 avocado

Heat oil in large pot over medium heat. Add onion, cook 5 minutes. Stir in garlic, cumin, and chili powder. Add first can of black beans. Drain last two cans of black beans and add to pot. Add 1 cup of salsa and 1/2 cup of shredded cheese. Reduce heat and simmer for 15 minutes, stirring often. Add black pepper, to taste. Top with avocado slices, shredded cheese, and fresh basil.
